I’m trying to eat more healthily these days! I was told that lentils were one of the things I should really be eating more of and I remember my mother cooking something similar so I thought I would give it a go and wow did it taste good.
Ingredients:
Italian Sausage
Carrot
Onion
Garlic
Celery
Chicken Stock
Salt and Pepper
Lentils
Olive Oil
Celery
Instructions
Adjust according to how many people you are cooking for!
First cover your lentils with cold water and bring to the boil and leave to simmer for about 45 minutes. (If the lentils aren’t cooked to your taste you may need to add some more water!)
Pierce your sausages and cover with the broth, bring to boil and let it simmer till cooked. (About 20 minutes)
Leave the sausages standing until everything else is ready.
Fry the onions in the oil, add the finely chopped carrots and celery. Let it cook at a low heat for about 20 minutes.
When the lentils are cooked add 2-3 spoons of tomato puree to taste, some of the broth from the sausages and the onions, carrots and celery. Add salt and pepper to taste. Let it cook a little more then Add the sausages and serve.
